Feijoa Everything: Muffin Edition (and Vegan)

Still going strong on the old feijoa over here so I thought I’d try a kid friendly treat option.

Admittedly, the boy has eaten more than the child but this is a bit of an honour. He didn’t like my coffee cake… (they can’t have good taste all of the time).

So here we are! Muffins!

Ingredients

  • 2 bananas
  • 1 cup feijoa
  • 2 tablespoon apple sauce
  • 3/4 cup white sugar
  • 2 cups flour
  • 2 teaspoon baking powder
  • 1/2 cup milk of choice (I had almond)
  • Currants/chopped fruit to decorate (optional)

Method

  1. Get that oven on and the child distracted. She’s going to sit at your feet but for five glorious minutes, she has free reign. 180C or 160C if fan bake.
  2. Cut up three cups of feijoa because the child will eat two cups as she’s ‘helping’. This leaves you with one cup of chopped feijoa. Guard it.
  3. In a blender, put your feijoa, banana and apple sauce. Blitz. Scare the child with the sudden noise so you have another three minutes alone until she realised you’re making noise right by the food…food wins.
  4. Put sugar in mix and blitz again. Kid is probably distracted by left over feijoa now. Go nuts.
  5. Fold in flour and baking powder. Laugh at the kid laughing at you making clouds with so much folding.
  6. Mix in your milk bit by bit till you get a smooth paste.
  7. Find some fancy pants cupcake/muffin cases.
  8. Drop on floor.
  9. Pick up then ones that haven’t touched the floor. The rest will need to burn in their private hell.
  10. Load each muffin case up and pop into the oven for around 15 minutes.
  11. Absentmindedly lick spoon and go in search of coffee.
